Still ignored by Alsace wine growers 40 years ago, our noble grape varieties Riesling, Pinot Gris and Gewurztraminer lend themselves admirably to over-ripeness.
Late on in the season, with misty mornings and sunny days, the grapes become concentrated in sugar and acidity: this is over-ripeness
Sometimes Botritys Cinerea, the fungus responsible for noble rot, develops.
Our harvest workers must have expert hands to delicately pick and sort the good grapes from the bad. This is how our concentrated wines are created.
After a long fermentation they are bottled the following spring and finally sold 18 months after the harvest.
|Gewurztraminer Sélection de Grains Nobles :
An extremely high concentration of sugar, acidity and flavours makes this a perfect vin de garde, a wine to keep, which can be served to round off a festive meal.
|Pinot Gris Sélection de Grains Nobles :
An unparalleled level of concentration and a long fermentation afford this wine a balance close to the best liquoreux. Simply enjoy it with a little butter, crusty bread and Roquefort.
